For dinner yesterday I made these delicious Millet Black Bean Patties with Corn from Terry Walters Clean Food. Clean Food is one of my favorite cookbooks. It’s not only vegan, but Whole Foods Plant Based and gluten free as well. She breaks down the chapters into seasons, which I think is AWESOME! Her follow up book, Clean Start, is equally as appealing.
Never tried millet? Learn more about this healthy grain here. It cooks up quickly and can be used like any other grain. It’s delicious as a hot cereal and in muffins as well!
I served these patties with a tomato slice and some avocado slices on top, sweet potato fries and fresh from the garden cucumbers and cherry tomatoes. These patties are certainly bun worthy topped with your favorite burger condiments if you so desire. They held together really well.
