Last night’s dinner were these tasty delicate patties, Pumpkin Chickpea Fritters. They turned out really great! My thinner ones fell apart a bit, but the thicker one’s held up just fine. So, once when you are pressing the mixture in your hands, just don’t press down too hard. The sage mayo was really good and the perfect sauce for them. I served them up with simple roasted cauliflower. So good!
I still had some leftover pumpkin puree after the muffins and fritters, so I decided to make Pumpkin Spice Granola. This turned out great too! I can’t wait to have some for breakfast tomorrow with a splash of almond milk.

Leftover Pumpkin Chickpea Fritters, carrot sticks, strawberries, kiwi and pretzels.
Leftover No-fu Love Loaf (an awesome lentil loaf by Dreena Burton…I purposely cut it up for the lunchbox, but it holds together really well!), grapes, cantaloupe, carrot and red pepper sticks and 2 little cinnamon shortbread cookies.
Did anyone take the October Unprocessed pledge? How did your first day go? Meat is allowed in this plan and, I believe, full fat dairy is too, so don’t count yourself out if you aren’t vegan.
