Bulgur Veggie Burgers

Last night was rainy and windy and we didn’t get nearly the amount of trick-or-treaters we usually do which, unfortunately, means leftover candy.  I only nabbed 1-2 pieces yesterday afternoon/evening, but today was another story.  I basically ate candy for lunch.  Ugh!  It may have been a lot of calories, but it wasn’t filling.  I needed to get back on track with dinner tonight so whipped up these tasty and hearty Bulgur Veggie Burgers.

Bulgur is a whole wheat grain that is high in fiber, low in fat and contains almost 6 grams of protein in 1 cup.

Pinto Beans are also high in fiber, low in fat and contain 15 grams of protein in 1 cup.

Together these two ingredients are a healthy, hearty, protein packed combo without all the fat and cholesterol of an ordinary beef burger.

I topped them off with a little Veganaise, mustard, pickles, tomato and avocado slices all on a whole wheat bun.  Yum!
